鯨を解体・切り分けるには、全体を四つの段（部位）に分ける。

(On the Dissection and Division of the Whale's Body)

When cutting and dissecting a whale, the entire body is divided into four sections.

First, starting from behind the nose of the head, one cuts around to behind the eye, severing the section at the ear as the boundary. This first section is called "Kabachi." Next, the section extending from behind the head to approximately the middle of the body trunk is called "Ate." Next, the section behind the Ate is called "Ōbone" (literally, "large bone").
