現代語訳
【右丁】
かきたけ
看過に載っている図。
菌史によると、初茸のように
肥えて大きさは茶碗のようで、
黄白緑色で、茎は灰色の
ものは前の二種と並んで食べられる。
ただし味はあまり良くない
と書かれている。
【左丁】
はんのきたけ
看過に載っている図。菌史によると
えのきたけのようで痩せて小さく
黄褐白色で、味はかなり良い。
また大きな傘に細い茎で表面は灰色、
裏は白く、一つの根から五、六十本の茎が
群生するものがある。市場でえのき
たけと言うのは、或いは採取してこれを
混ぜると言われている。

Persimmon mushroom (kakitake)
Illustration from the Kanka. According to the Kinshi (Mushroom History), they are plump like hatsutake mushrooms and as large as a tea bowl, with yellow-white-green coloring and gray stems. These, along with the previous two varieties, are edible, though the taste is said to be not particularly good.

Alder mushroom (hannokinotake)
Illustration from the Kanka. According to the Kinshi, they resemble enokitake mushrooms but are thin and small, with yellow-brown-white coloring and quite good flavor. There are also varieties with large caps and thin stems, gray on top and white underneath, with fifty to sixty stems growing in clusters from a single root. What is sold in markets as enokitake may sometimes be mixed with these mushrooms.
