であった。近年の花合わせは数十から百品にも及ぶ。どうして花だけが異なる

I believe that regarding the varieties of morning glory flowers, there were merely two colors, black and white.
Those with two flowers on one plant were called "Black and White Jiangnan Flowers." Some say
there are four varieties: deep blue, light blue, pure white, and light pink, with the pink ones being rare.
In recent years, flower competitions have reached dozens to even a hundred varieties. How is it that only the flowers differ?
