華鳥譜序
皇國羽族之夥不可勝數、而其足以供常饌
者亦不下数十種、兹摘録之、方得六十有一品、
品各為圖￣ニ、各標倭名漢名、其未詳者闕、
併記氣◦（味）功用、題曰華鳥譜、有客難曰、此是
一禽譜耳、何以有華鳥名乎、余曰、六十一為
華字、乃六十一禽諩之謂也、客莞尔而去、遂
以此為序、萬延二年辛酉正月之望養竹老人
森立之書于作樂屠蘇之南廂下

華鳥譜序
我が国の鳥類は数多く、数え切れないほどである。そのうち日常の食事に供することができるものも数十種を下らない。ここにそれらを抜粋して記録したところ、ちょうど六十一品を得た。品目ごとに図を作成し、それぞれに和名・漢名を記し、詳細が不明なものは空欄とした。あわせて気味（味）・効用を記録し、題して「華鳥譜」とした。ある客が疑問を呈して言うには、「これは一つの鳥類図譜に過ぎない。なぜ華鳥という名前なのか」と。私は答えた。「六十一が華の字となる。すなわち六十一種の鳥を図示するという意味である」と。客は微笑んで去っていった。よってこれを序文とする。万延二年辛酉正月十五日、養竹老人森立之が作樂の屠蘇の南廂の下にて書す。

Preface to the Illustrated Guide to Ornamental Birds (Kachōfu)
The avian species of our imperial nation are countless and innumerable. Among these, those that can serve as regular fare number no less than several dozen varieties. Here I have selected and recorded them, obtaining exactly sixty-one species. For each species I have created an illustration, marking both the Japanese and Chinese names for each, leaving blank those whose details remain unclear. I have also recorded their flavor and medicinal properties, titling this work "Kachōfu" (Illustrated Guide to Ornamental Birds). A visitor raised a question, saying: "This is merely a bird manual—why does it bear the name 'ornamental birds'?" I replied: "Sixty-one forms the character 'ka' (華). This refers to the illustration of sixty-one bird species." The visitor smiled and departed. Thus I make this my preface. Written on the fifteenth day of the first month of Man'en 2, year of the Metal Rooster, by the old man Yōchiku, Mori Tatsuyuki, beneath the southern eaves of Sakuraku while enjoying New Year's spiced sake.
