至今夫碎々之粒一旦奪胎于磑換
骨于濾水湛雲蒸忽爾白瑩々然方

模描万状何尽于此乎是謂之易牙
復出献可於淮南亦不誣耳我而調

今や、砕かれた粒が一旦石臼で胎を奪われ、濾し水で骨を換え、湛然として雲のように蒸気が立ち上り、忽然として白く輝く美しい方形の璧が現れるのである。これはまた奇妙ではないだろうか。何氏の著した書では「一璧にして百珍」と云う。ああ、食品の些末なものが、わずかに人の口腹を満たすだけのものであるが、しかしその所謂る料理調理の術は変幻百出し、模写万状で、どうしてこれで尽きるであろうか。これは易牙が再び現れて淮南王に献上したとしても偽りではないだろう。我がこれを調理し、彼がこれを和え、これを世に伝え施せば、ますます変化し、ますます

珍しく、ますます化し、ますます奇なるものとなる。変化してまた変化し、化してまた化するものであろうか、そうでないだろうか。変化は結局窮まることがないのである。書物が完成して弘がその序文を余に問うたので、そこで戯れに一絶句を題して曰く「淮南の遺述百珍成り、飽食の富翁潔腹に生ず、皆是れ澹然として道を味わうに堪え、腐儒甘んじて一斉の名を得たり」と。

When the book was completed and Kō asked me for a preface, I playfully composed this quatrain: "Huainan's legacy, a hundred delicacies achieved; Well-fed wealthy men find pure sustenance; All this, so subtle, worthy of savoring the Way; Even pedantic scholars gladly gain unified fame."
