## From the *Sansai Zue* (Encyclopedia of the Three Realms): Old Woman Fish, Ribbon Fish, Biwa Fish (Common name: Anglerfish / Ankou)
According to the *Senshu Fushi* (Quanzhou Prefecture Gazetteer): This fish is also called the "Navel Flower Fish." It has a band on its belly resembling a *pèizi* (a decorative cloth or sash), attached to its body, hence the name "ribbon fish" (*jyu-gyo*, 綬魚). Its shape resembles a tadpole, and the larger specimens can be as large as a tray. The *Wudu Fu* (Ode to the City of Wu) states: "This fish has no scales and its shape resembles a biwa (lute)," hence it is also called "biwa fish" (琵琶魚).
**[Author's observations]**
This fish is found in great abundance in the Eastern Sea, but is rare in the southwestern seas. Those that appear in early October are most highly prized; after March they become somewhat scarce, and in summer and autumn they are entirely absent. Its shape is round and flat like a tray, with a thick body and large belly. The back is black, the belly white; the eyes and nose point upward, the mouth is wide and large with whisker-like appendages. The fins are short and weak, and the bones are extremely soft. The tail is undivided and long.
[Eaten as a thick soup (atsumono).] The flavor is mild and sweet, of a neutral constitution. [Only the stomach and head are removed;] all other parts are edible and make an excellent dish. There is a prescribed method for butchering: [it is called "tsuri-giri" (hanging cut)]. [A rope is threaded through] the [lower lip] and the fish is hung from a [roof beam]. Water poured into the mouth [fills to about five or six shō], and the water naturally [overflows] from the mouth as a measure. First, the skin of the [throat and neck area] is cut, then the skin around the [whole body] is peeled away; the fins and [flesh] are separated, and the gall bladder, intestines, and bones are cut apart. When the stomach sac is pierced with a knife, the stored water flows back out. If the fish is not butchered according to the proper method, the flesh will not separate cleanly from the skin and bones.

## Japanese Notes (apparently in the author's own hand)
**In Izu:** Caught from winter through spring. Anglerfish (ankou) are caught by net. The "Kutsu-ankou" is small, about one shaku in size, reddish in color, and delicious. No eggs observed — possibly male.
**Uzami, Izu:** In October, anglerfish inhabit the seafloor at about seven shaku depth. Caught using flounder nets.
**Geishū (Aki Province):** Anglerfish are rare in the western provinces. They lurk in the mud and are caught by rod-fishing.
**"Shyōkoru Setsuppu":** Lives among seaweed and tidal grasses.
**Purple anglerfish (Murasaki-ankou):** Considered the finest quality.
**Between Ōtsu and Kanazawa:** A Mr. Chiba obtained an anglerfish covered in hair. The hair was indistinguishable from that of a weasel.
