Following this classification, and because the rhizome (*gū*) forms first before sending out roots, it is today cultivated in marshes, wetlands, and lakes throughout the country, and is available for consumption throughout all four seasons. In general, the rhizome of lotus plants with pale pink flowers is large and thick, and has a superior flavor. The variety called *mochihasu* ("glutinous lotus") is especially prized as a food. The circumference of the root is three to four *sun* [approximately 9–12 cm], and its length is three to four *shaku* [approximately 90–120 cm], with two to three nodes. When fully mature, this rhizome becomes sticky and tender. --- **Gūmitsu** (藕蜜) — *hasu no wakane* (young lotus root) This is a product that grows in summer from the old, overwintering root (*shukkon*). What develops from the end of summer through autumn is named *gū* (藕, the mature rhizome). The younger growth is referred to here.
