しでの木を以て菌
を作りしいたけに

黒色にして長き茎形 鶏冠花（けいくわんくは）
に似たるものあり加賀の人これ
を宝珠（ほうしゆ）といふ今市中 鬻者（ひさくもの）
此種絶て多（おほ）し皆奥州に出
る所ろといふ大和本草に皮
たけ又鹿たけといふ秋野に
生す茎長くして大なり生なる
時の色紅黒かわきて後 黒（くろ）
食すへし或云生にて食す
へからす毒（とく）あり乾（ほ）して食ふ

してたけ
『信陽菌譜』に載せられている図である。同書に信州・三州の山中の里人がしでの木を使って菌を作り、しいたけと偽って売るという。
【左丁】
かふたけ かわたけ
ししたけ しかたけ《『本朝食鑑』より》
楠本氏の蔵図である。『菌史』に一種、黒色で長い茎の形が鶏冠花に似たものがある。加賀の人はこれを宝珠と呼ぶ。現在市中で売る者はこの種がとても多い。皆奥州に産出する所のものだという。『大和本草』に皮たけまた鹿たけという。秋野に生じる。茎は長くて大きい。生の時の色は紅黒で、乾いた後は黒い。食べることができる。ある人は生で食べてはいけない、毒があり、乾燥させて食べるべきだという。

This is a figure recorded in "Shin'yō Kinfu." According to the same book, village people in the mountains of Shinshū and Sanshū use hornbeam wood to cultivate mushrooms and sell them fraudulently as shiitake.

Shishitake, Shikatake 《From "Honchō Shokkan"》
This is a stored illustration by Mr. Kusumoto. In "Kinshi," there is a variety that is black in color with a long stem shaped like a cockscomb flower. People of Kaga call this "hōshu" (precious jewel). Currently, sellers in the market have very many of this type. It is said that all come from places that produce them in Ōshū. According to "Yamato Honzō," it is called kawatake or shikatake. It grows in autumn fields. The stem is long and large. When fresh, the color is reddish-black, and after drying it becomes black. It can be eaten. Some say it should not be eaten raw as it is poisonous, and should be dried before eating.
