Next, soak it in lukewarm water and twist it in a leftward (counterclockwise) direction.
**No. 18 — Method for Mizore Daikon (Sleet-style Daikon)**
First, remove the outer skin as with the previous preparation, and slice thinly to about half the thickness at the cut ends.
Then, sprinkle the finest-quality kudzu (arrowroot) powder over the daikon, and on top of a cutting board, tap it gently and repeatedly with a pestle so that the kudzu powder adheres to both the top and bottom surfaces of the daikon. Note: it is best to first brush the daikon with sake before coating it with the powder. Next, bring water to a boil in advance and place the daikon into it. It is best to leave the lid of the pot open. When it rises to a boil and floats up, scoop it out and cool it in water.
**[Left folio]**
Then, either cut it into small rectangular pieces or tear it apart by hand before using. It is suitable for: clear soup, thin kudzu-thickened broth, clear broth soup, red miso soup, or as sashimi, vinegared salad (namasu), small dish preparations, garnish for sliced fish dishes, chawanmushi (steamed egg custard), confectionery soup bowls, and indeed for any other dish as well.
**No. 19 — Method for Soboro Daikon (Crumbled Daikon)**
First, cut the daikon into pieces of about three sun (approximately 9 cm), peel the outer skin in a rounded manner, and slice thinly from the cut ends. As with the previous method, brush the daikon with sake, dust the cutting board with kudzu powder, lay the daikon on top, sprinkle more kudzu powder over it, and then with a pestle... *(continued on next page)*
