【Thirty-three (continuation of previous recipe)】 Take a summer daikon radish, peel the outer skin, and parboil briefly. Allow it to cool thoroughly in a cold breeze, then soak it in high-quality ume vinegar (梅酢, *umazu*) with a little sake added for about three days. On a fine day, dry it for one full day; that night, return it to the original ume vinegar. If the following day is also fair, dry it again for a full day. After that, leave it soaking in the ume vinegar for five or six more days, then remove it, coat it thoroughly with white sugar, and leave it to rest. There are many ways to use this preparation: as sashimi accompaniment, as *namasu* (vinegared dish), as a small-plate dish, as a vinegared preparation, or as a garnish for poultry or fish dishes, as well as many other uses. --- 【Thirty-four: How to Make Daikon Oroshi-ae (Daikon Grated Dressing)】 Cut winter-pickled *kōnomono* (pickled vegetables) into pieces of about one *sun* (approx. 3 cm), remove the outer skin, and mince into pieces about one *bu* (approx. 3 mm) wide and one and a half *bu* (approx. 4.5 mm) thick. Rinse three or four times in water, then squeeze out the moisture and set aside. Take the outer skin of another pickled vegetable and grate it with a wasabi grater, place in a mortar, and grind well. Add a little sansho (Japanese pepper) and a little miso, and grind these three ingredients well together. Add the squeezed pickled vegetable and mix everything together. Wasabi alone is also quite good. --- 【Thirty-five: How to Make Daikon Denbu】 (Text not yet recorded on this page.)
