かつほ二ふし入せんじふくろに入たれ候てくみ返し〳〵三へんこしてよし
右料理之一巻は庖丁切かたの式法によらす唯人々作次第の物な
ればさして定りたる事はなく候へ共先いにしへゟ聞伝へし事けふまて
人の物語をとむるにゟ料理物語と名付侍るか遠国名所〳〵の
珍物は幾千万ならむ又明日は聞事みる事もあらむおかしく出
来る事は書そへてんかし山野河海の魚鳥も無一物ゟ出来たる
無尽像雨露のやしなひに生するかたちは様々かきりなき
事なれは誰かずへ斗かたし今聞ゆるもの有もこのむましきは残し
をく又うるはしきを失念も有なん只あらましこと春の
なかめ旅の空つれ〳〵のあまり筆にまかせ侍りき然とも

現代語訳
鰹節二節入れ、煎じ、袋に入れ垂れ候て、汲み返し返し三遍濾してよし。
右料理の一巻は、包丁切り方の式法によらず、ただ人々作り次第の物なれば、さして定まりたる事はなく候えども、先ず古より聞き伝えし事、今日まで人の物語を留むるによって「料理物語」と名付け侍るか。遠国名所々々の珍物は幾千万ならむ。また明日は聞く事見る事もあらむ。面白く出来る事は書き添えてんかし。山野河海の魚鳥も無一物より出来たる無尽蔵、雨露の養いに生ずる形は様々、限りなき事なれば、誰か数え測るべし。今聞こゆるもの有りとも、この好ましきは残し置く。また美しきを失念も有りなん。ただあらましごと、春の眺め、旅の空、つれづれの余り、筆に任せ侍りき。然れども候も予は詳しく知らず。存知の事、口伝を相尋ねらるべき者なり。武州狭山これを書く。

This volume of cooking does not follow the formal methods of knife work and cutting techniques, but rather consists of dishes made according to each person's preference. Therefore, there are no particularly fixed rules. However, I have named it "Ryōri Monogatari" (Tales of Cooking) because it records the stories people have told, preserving what has been heard and passed down from ancient times until today. The rare delicacies from distant provinces and famous places must number in the millions. Tomorrow too, there will be things to hear and see. I hope to add anything interesting that emerges. The fish and birds of mountains, fields, rivers, and seas - all created from nothing into an inexhaustible treasure, nurtured by rain and dew, taking countless forms without limit - who could count or measure them all? Even among what we hear of now, I preserve what seems desirable, though I may also forget beautiful things. These are merely rough thoughts - spring scenery, traveling skies, idle moments - I have let my brush run free. However, I myself do not know these matters in detail. Those with knowledge should inquire about oral traditions. Written in Sayama, Musashi Province.
