はくがん（白雁）
性質・味は雁と同じ。味は淡白で脂肪が少なく美味である。
秋の八月にはくがん（白雁）がまず到着し、次にかりがね（雁金）が来て、まがん（真雁）が
最も遅く到着する。春二月の末にまがん（真雁）がまず帰り、三・四月に
至って、はくがん（白雁）が最も遅く帰る。

Hakugan (White goose)
Its nature and taste are the same as the wild goose. The taste is mild with little fat, making it excellent.
In the eighth month of autumn, hakugan (white geese) arrive first, followed by karigane (wild geese), and magan (true geese)
arrive last. At the end of the second month of spring, magan (true geese) return first, and by the third and fourth months,
hakugan (white geese) return last.
