第五 玉子にて雪の拵様の事
一鍋へ水を少し入其中へ卵の白み
ばかり少し入れ《割書：尤少しと云ふは｜卵一ツの白みなり》夫を
《振り仮名：にたてると｜かきたてながら》真白成あわが立を穴のあいたる
かなしやくしにて外の物の中へ入れ〳〵
ためると卵一ッの白みにて雪のやうな
物が凡そ半ざる位もとれるものなり

第六 茶碗もりの事
一茶碗もりと云ふは矢張吸物を茶碗へ入
て出す事なり是は潮の吸物抔がよしと云ふ
第七 茶碗むし
一茶碗むしと云ふは茶碗の中へ入れて
むしたるすへものゝ事なり
是はあふく卵にてつくるなり

第五 卵で雪の作り方について
一、鍋に水を少し入れ、その中に卵の白身
だけを少し入れる（もっとも少しというのは卵一個の白身である）。それを
煮立てながらかき混ぜると、真っ白な泡が立つので、穴の開いた
金属製のお玉で他の器の中に移し入れながら
ためると、卵一個の白身で雪のような
ものが大体半ざる分ほども取れるものである。

第六 茶碗盛りについて
一、茶碗盛りというのはやはり吸い物を茶碗に入れ
て出すことである。これは潮汁の吸い物などが良いと言う。
第七 茶碗蒸し
一、茶碗蒸しというのは茶碗の中に入れて
蒸した据え物のことである。
これは溶き卵で作るのである。

This is made with beaten eggs.
