(With reference to the diagram) The first course (honzen) and second course (nizen) are arranged in this manner, placed on boards fitted with legs like a dining stand. The trays for the two overseers — the mokudai (deputy official) and the sakusho bugyō (works overseer) — are set out side by side in the transverse seats to the north, in two settings. However, neither of the two individuals is present; the settings are prepared merely as a formal offering (omōke). Since the details of this tray arrangement were not clearly recorded in the old records of the Mori clan either, Monden-no-shō Yasukuni traveled to the capital and inquired of Takahashi, the Imperial kitchener (gohōchōnin) within the Palace, and the arrangement was established accordingly. Next, sake was served (poured into barrels and drawn separately, then brought into the kitchen, decanted into chōshi pourers, and offered in three cups each separately, as customary). Next, a gift of one tan of cloth each was bestowed as a stipend (rokufu) (two members of the shrine, Zushono-suke and Nuinono-suke, appeared wearing formal hunting robes [hōi] and gathered trousers [sashihiki]). First, the following fifteen persons were called forth in order: the senior chief carpenter (shō daiku), deputy chief carpenter (gon daiku), senior master carpenter (shō tōryō), deputy master carpenter (gon tōryō), Sakubei, Santarō, Shinshirō, Sasuke, the deputy chief carpenter's son, Izumi and his son, the cypress-bark roofer Shichizaemon, the plasterer Saemon, and likewise Kichibei. Each came forward, received their stipend, offered a formal bow (issatsu) to the sakusho bugyō, and then withdrew. The manner of each was the same as before. Next, the banquet settings were cleared away (each person had received the hospitality as their due. The treasurer [suitō] petitioned that, just as he had taken charge of the sake and other items at the adze ceremony [chōnabajime], he should likewise be responsible for clearing these away; however, no ruling was made on the matter, and the various officials cleared everything away themselves). Next, everyone dispersed. Regarding the provisioning of the above banquet, in ancient times it was handled amidst the commotion (sawagi) at the timber yard. --- **[Contents of the Diagram — Meal Layout]** *[First Course]* - Sushi (made with shiira/mahimahi, sliced flat), namasu (vinegared dish, served three times), rice (five shō serving), chopsticks (with stand) - Height: three sun; served in unglazed earthenware (kawarake) - Served in earthenware vessels the size of a tray tile *[Second Course]* - Flying fish (tobiuo), kiwari (wood-cut style preparation) - Sea bream (tai): height three sun, salt-cured (shiobiki), sliced flat - Koganeku (hard abalone preparation?), abalone (awabi) - Octopus (tako) - Soup with sea bream; rice (two shō serving, topped with konbu nori seaweed); chopsticks (with stand) - Cold soup (hiyajiru) (with fish roe [rarako] for the children)
