豆腐百珍序文
豆乳というものは穀物の粒が変化したものであり、物の変化の一例である。造物主がこれを司っている。人間は物とは異なり、自ら変化することができる。自ら変化できるとはいえ、それもまた造物主の意志によるものである。変化は窮まることがない。竜が現れたり潜んだりし、花が咲いたり枯れたりするように、世の中の有様もそれに応じて消長し、人の営みもそれに応じて移り変わる。このように集まったり散らばったりして、変化しないものはなく、変化の気に満たされないものもない。思うに淮南王の術は遥か昔のことであり、その製法は代々受け継がれてきた。

Soy milk is the transformation of grain particles, an example of the metamorphosis of matter. The Creator governs this process. Unlike inanimate objects, humans possess the ability to transform themselves. Though we can change ourselves, this too is according to the Creator's will. Change knows no bounds. Just as dragons appear and disappear, and flowers bloom and wither, the state of the world waxes and wanes accordingly, and human affairs shift in response. Things gather and scatter in this manner - nothing remains unchanged, nothing escapes the transformative force. Indeed, the arts of the King of Huainan belong to ancient times, yet the methods of preparation have been passed down through generations.
