**[Continuation of Sugar Refining]**
Sugar filtered after absorbing the properties of the wheat straw juice will necessarily be clean and of good quality. The drain hole is then stopped up, the liquid is poured in and allowed to crystallize. Retaining the shape of the funnel, the sugar forms a single mass that is wide at the top and narrow at the bottom. This mass weighs over three *kanme* (approximately 11.25 kg) in our country's units. It is placed upside down, blue paper is pasted over its outer surface, and it is sold in all directions. It is shaved off with a knife for use.
**[Sugar-Making Equipment]** (Illustrated diagram)
- *Garo* (earthenware funnel/mold): height 2 *shaku*, diameter 1 *shaku* 5 *sun*
- Wooden tub: height 7–8 *sun*
- Heated sugar cauldron: diameter 5 *shaku*, height 2 *shaku*, depth 1 *shaku* 5 *sun*, with an earthen furnace
- Full shape of the sugar loaf: height 1 *shaku* 5 *sun*, width 5 *sun*, base width 8 *sun*, sealed and pasted with blue paper
**[Method for Making Rock Candy (氷凍, *Hyōtō*)]**
To make rock candy, an unidentified white powdered substance is added (the details of this material are unknown). Once the refining is complete, the mixture is poured into a shallow, flat iron mold measuring three *shaku* square and over one *sun* deep. Several iron partition plates (*kakuban*) are inserted in advance inside the mold. Across each partition, a single cord or thread is strung taut vertically. When the sugar syrup freezes and solidifies, the partition plates are removed and the contents are tilted out. This produces column-shaped sticks of one *sun* square. These are then cut crosswise with a small knife. The cord running through the center cannot be removed — it is just like threading coins onto a string (*sashi*). Furthermore, the two ends of the cord are tied together to form a ring like a rosary (*ganju*), and this is stored in a wooden box…
