す扨目方四匁の卵を拡（ひろ）け置く為には二尺四方

さて目方4匁の卵を広げ置くためには、2尺四方程の浅い箱を厚紙で作り、その中へむらなく卵を散らし、小さい部屋へ入れ、部屋の暖かさを初めはセルシウスの17度すなわちファーレンハイトの63度とし、毎日次第に暖かさを増し、第12日目に至ってはセルシウスの28度すなわちファーレンハイトの82度に至るべきである。ただし順序を追って暖を増すべきであり、決して急にしてはならない。このようにすれば8日目より孵化を始め、12日目までには大抵皆這い出るのである。これを予め設け置いた別室の木枠に網を張り紙を敷いたものの中へ移すべきである。その取り扱いはすべて清潔なることを肝要とする。
