本編（後編）は、第五章「煮焼き時刻の部」第七十一等の解説より、第八章「菓子の部」第百十等の製法まで、詳細に翻訳してなるものをもって全編とする。およそ西洋に関する翻訳書は数多くあるとはいえ、交際上の急務にとって最も肝要なことは、すべからくこの書に尽きると言うべきであろう。
