○Recipe No. 26 "Baked Mackerel" (meaning: broiled/baked mackerel)
Ground pepper, salt, a little oil, "parsley" (a variety of *seri*/water parsley), yuzu juice, butter
Method of Preparation:
Remove the innards of the mackerel, wipe the belly and back well with a cloth, split open the back, and pour in ground pepper, salt, and oil. Then, broil for 10 minutes (*miniūto*), turning repeatedly throughout. Finely chop the "parsley," mix it with butter, add a little pepper, yuzu juice, and salt, mix together, and place back into the split back of the fish. Additionally, prepare melted butter in a separate vessel to serve alongside. Whether to use it or not is left to each person's preference.
