して根を分けて取って食べる。また4月に実がなった後、その茎を切り取ると宿根から新しい葉が生えてくるが、これも食べることができる。また冬の間に刈り取って食べると、その跡から新しい葉が生え、春になると肥大になる。冬春ともに刈り取ってもよい。刈り取って宿根を残せば長く持ち、刈り取ることができる。およそ大葱・小葱ともに柔らかな砂地に適している。糞水を頻繁に注ぐべきである。小便が最もよい。また湿気が多すぎるときりむしが発生し、またかたつむりが生じて皆切りつくすことがある。用心すべきである。
