薄荷（はっか） 時珍が曰く、3月に古い根から苗が出る。清明の前後に根を分けて植えるべきである。日当たりのよい所に薄く植えれば甚だよく茂る。糞尿を嫌う。膾や汁物、酢の物などに入れれば香気を助け、生臭い気を去る。刻んで食べるべきである。長く育てようとする時、先端を摘み取れば脇枝が多く生えて葉が繁る。4、5月に早く葉を取る。6月に又葉を取る。葉を摘み取って日に1日干し、その翌日陰干しにするとよい。茎が小さくて気が香ばしいものを薬に入れると本草に見えている。日本の俗称でこれを竜薄荷と言う。これを用いるべきである。一種、緋薄荷と言うものがあるが、気が香ばしくないので用いるべきでない。
