傍らの根を取って漬物とする。十月の終わりに糠で覆うべし。覆わなければ寒さで傷んで枯れる。二月に取り除くべし。○八月以後は上を踏むべし。踏めば根が茂って来年花が多い。若い時は茎を食し、夏秋は花を食す。花を生じるのに夏秋の二種がある。六月に花を生じるものがあり、七八月に生じるものがある。疑冬（ふき）と一緒に植えれば茂らない。疑冬の根と互いに妨げ合うためである。樹陰に植えてよい。木陰がなければ畦を作って他の菜のように植える。夏はその上に薦で覆う。あるいはその西南に扁豆・夕顔・南瓜等を植え、高い棚を作って蔓を棚に這わせ、旱魃を避けるべし。俗に言う、蘘荷は甚だ鉄を嫌う。鉄器で刈ってはいけない。鍬で掘ってはいけない。一カ所に久しくあって鋤で耕さなければ茂る。雨の多い年は長く茂る。春に茎を切れば秋に花を生じない。
疑冬（ふき） 旱魃を恐れる。木陰に植えるべし。糞水・酒粕汁あるいは米のとぎ汁と小便を等分に混ぜ合わせて、しばしば注げば茂って味が良く柔らかになる。八九月に耕して根土を柔らかにして植え直すべし。京畿では畑に植えるのが最も良い。花は十二月より生じる。生でおろして味噌に加え温めて食す。味が良い。塩漬け・味噌漬けも良い。『本草綱目』に疑冬の説明が詳しくない故、ふきを疑冬に当
