用＿レ根￣ヲ菜￣ノ類
牛蒡 居家必用日肥良の地を正月に三五度熟
耕し深く掘て地を軟（ヤハラ）け糞を敷て上を平にし二月
の末に子￣ヲ しけくまくへしうすけれは根の心虚す苗
生して後草を去へし旱には水を澆く又曰当年
結（ムスフ）＿レ子￣ヲ者は種￣ルトキ不＿レ生ふる根にみのりたる子可＿レ植月
令広義曰種時乗＿レすスレハ雨￣ニ即生す若雨なくんは水を
用ゆへし又苗をきりて食ふる韮をきるか如
くすへし◦〇秋冬春の間 蘿蔔（タイコン）と同しく上品

根を用いる菜の類
牛蒡 『居家必用』に曰く「肥沃な良い土地を正月に三、五度よく耕し、深く掘って土を柔らかくし、糞を敷いて上を平らにし、二月の末に種を密に蒔くべし。薄く蒔けば根の芯が虚になる。苗が生えた後は草を取り除くべし。日照りには水を注ぐ。」また曰く「当年結実するものは種を蒔く時期に適さない。根に実った種を植えるべし。」『月令広義』に曰く「種を蒔く時に雨に乗じれば即座に生える。もし雨がなければ水を用いるべし。」また苗を切って食べるのは韮を切るのと同じようにすべし。◦〇秋冬春の間は蘿蔔（大根）と同じく上品である。

Types of vegetables that use the root
Burdock The "Kyoka Hitsuyō" states: "In fertile, good soil, plow thoroughly three to five times in the first month, dig deeply to soften the earth, spread manure and level the surface, then sow seeds densely at the end of the second month. If sown thinly, the core of the root becomes hollow. After the seedlings emerge, weeds should be removed. During dry periods, water should be applied." It also states: "Those that bear fruit in the current year are not suitable for sowing. Seeds that have ripened on the roots should be planted." The "Getsuryō Kōgi" states: "If sowing is done during rain, germination occurs immediately. If there is no rain, water should be used." Also, cutting and eating the shoots should be done in the same manner as cutting chives. ◦〇 During autumn, winter, and spring, it is of the highest quality, same as daikon radish.
