豇豆（サヽゲ） さゝけを角豆とかくハ非也のう農政全書穀雨

前より六月の中ノ物まて 十日十五日程へたて

穀類
豇豆（ササゲ） ササゲを「角豆」と書くのは間違いである。農政全書によると、穀雨の頃（三月中旬）に種をまく。広義によると、灰で甕を覆う。
豇豆はつるが長く伸びて垣根に這うササゲのことである。白いもの、色のついたもの、赤いものがあり、いずれも味は同じで性質が良い。莢の長いものは一尺四、五寸から二尺に達する。また短くて一房に多く実るものもあり、いずれも莢ごと煮て食べる。性質が良く、夏野菜の上品である。民用を茄子に匹敵する。三月前から六月中旬の間のものまで、十日から十五日程度間隔をあけて次々に植えるべきである。あまりに早く植えると寒さで傷んで早く枯れる。順次遅く植えれば七、八月、九月のものまで実がなる。また六月に遅く植えたものは八、九月に実がなる。

Cowpea refers to sasage whose vines grow long and climb on hedges. There are white ones, colored ones, and red ones, all with the same taste and good properties. The long pods reach one shaku four to five sun, up to two shaku in length. There are also short ones that bear many pods in one cluster. All can be boiled and eaten together with their pods. They have good properties and are among the finest summer vegetables. Their utility to common people rivals that of eggplant. From before the third month until mid-sixth month, they should be planted successively at intervals of about ten to fifteen days. If planted too early, they will be damaged by cold and wither quickly. By planting successively later, fruits will bear until the seventh, eighth, and ninth months. Those planted late in the sixth month will bear fruit in the eighth and ninth months.
