【右丁（序文）】
食物に関する書物は世に多くある。今ここに抜き書きするのは、まことに余分なことであり、人々に笑われるべきことである。ただ、村の牧童や農村の婦人たちのために、いささかまたそうするのみである。

五味類（飲み物の部）
**臘雪水（ろうせつすい）** 大寒の雪のことである。春の雪は変質しやすいので、貯えることはできない。雪を焼き物の甕に入れて蔵し、庭の奥の日陰の場所に埋めておき、翌年の春・夏に至った時に、必要に応じて開けて使用する。
●気味（性質と味）は寒冷で毒はない。●お茶を煮るのに使い、衣服を洗えば、あらゆる染みや垢を取り去り、新品同様になる。また、様々なものを浸しておくと虫が付かず、餅・青物（野菜）・茸・魚・鳥などを浸しておくと腐敗せず、湯浴みに使えば体や髪が（清潔になり…）

**Rōsetsu-sui (Midwinter Snow Water)** This is the snow of Daikan (the "Greater Cold," the last of the 24 solar terms). Spring snow spoils easily and cannot be stored. One should place the snow in a ceramic jar, bury it in a shaded spot in the back garden, and open it as needed when spring or summer of the following year arrives.
● Its nature and taste are cold, and it is non-toxic. ● It may be used to brew tea; when used to wash clothing, it removes all manner of stains and grime, leaving things as if new. When various items are soaked in it, insects will not infest them; when mochi (rice cakes), vegetables, mushrooms, fish, or fowl are soaked in it, they will not spoil; and when used for bathing, the body and hair (become clean and refreshed…)
