現代語訳
一、卵の白身を取り、氷砂糖の粉を見合わせに入れ、細かな布で絞って、深い鉢に入れ、細い竹の串で忙しくかき立てれば、白身が大分に増え、次第に泡立つのを、薄板にかまぼこのように、厚さ六分位に平らに付けて、蒸籠に入れ蒸すべきである。これは早く蒸せるものである。さて取り出し、熱いうちに、紅花の汁、青菜の汁、山梔子の汁で縞模様を引くべきである。さて板を取り、切って結ぶか、または千切りにするなりとも、趣向に任せ、箸上げに入れ、箸上がりに使う。一つは手取り肴、一つは菓子肴である。

一、これは大角の赤寒天一本を水に浸け、ふやかし、鍋に入れ、水二合入れて煮て、布で一遍早く漉し、また鍋へ入れ、熱くして、卵十個を割り込み、よくよく溶き、これも布で漉す。さて右の中へ、黒砂糖を五十匁、酒少し入れる。これも布で漉す。この二色を寒天の鍋の中へ入れる。これも少しずつ、小杓子でそろそろと、かき回しながら入れるのである。皆入れてから
