卯花（うのはな）熬卵（いりたま）の仕方（しかた）
一たまごを。何（なに）ほどにても。わり。是（これ）もあら〳〵と。と
き合せて。鍋（なへ）の底（そこ）へ。焼豆腐（やきとうふ）を。二ツほど。ならへしきて。

て、右の器物ともに蒸籠に入れて蒸すべし。また別の鍋に薄い味噌汁を作り、よく煮立てて、右のどじょうを小さじですくい、椀に入れて右の汁をかけ、山椒を添えて出すべし。吸い物に一段とよし。ただし冷えの薬なり。
卯の花炒り卵の作り方
一、卵を何個でも割り、これも粗くといて合わせ、鍋の底へ焼き豆腐を二個ほど並べて敷いて煮て、この上へ右の卵をそっと流し入れ、さて遠火でそろそろと煮て、新しいわかめを火取りして、すぐに細かくして、細かい篩で篩って、さて卵を器に入れ、このわかめの粉をかけて薄醤油をかけ、その上に卯の花を置いて出すべし。これはある茶人の秘伝の料理なり。卯の花は卵の毒を消すものなり。ただし鍋の底の豆腐は用いず。
