みかんすれあはぬやうにする也上には板を

〇ぶどう持様
一ぶどう余（あまり）熟（じゆく）せさる時取一ふさづゝに
する扨 乾（かわき）たる地（ち）をほり下より二寸ほど
半（なかば）に竹のすをかき其上にすれあはぬ
やうにならべ上には板を敷其上に土を
五寸ほど置申候尤板もぶどうにすれ
あひ申さぬやうにいたし置候
〇梨子（なし）持様
一しやうがひげ草能 茂（しけ）りたるを根ともに
ほりかの草の中に梨子（なし）を包（つゝみ）置扨 乾（かはき）

くにて持申候
〇柚の持やう
一柚の出立に取竹につり箱にふたを
して四方よくつめ申候但柚子は中（ちう）

つずつなるようにして置きます。
蜜柑が擦れ合わないようにするのです。上には板を
敷き、土を五寸ほど置きます。このようにすれば色も変
わらず、しわもよらず、来年まで持ちます。
○葡萄の保存方法
一 葡萄があまり熟さない時に取り、一房ずつに
します。さて乾いた地を掘り、下より二寸ほど
半ばに竹の簀をかき、その上に擦れ合わない
ように並べ、上には板を敷き、その上に土を
五寸ほど置きます。もちろん板も葡萄に擦れ
合わないようにして置きます。
○梨の保存方法
一 蛇の髭草がよく茂ったものを根ごと
掘り、かの草の中に梨を包んで置き、さて乾いた

地を掘り、蛇の髭を入れ、上に板
の蓋を梨に擦れ合わないようにし
て、その上に土を五寸ほど置きます。いつまでも
持ちます。ただし蛇の髭一株に梨一
つずつ包んで置きます。
○同じく秘方
一 その梨を木よりもぎ取る際、地へたたき
落としたものは良くありません。生の赤小豆粒
の内へ擦れ合わないように置けばいつまでも
良いです。十の物のうち七八程は成り立てのよう
に持ちます。
○柚子の保存方法
一 柚子の出始めに取り、竹に吊り、箱に蓋を
して四方をよく詰めます。ただし柚子は中

from the bottom at mid-level, arrange them on top so they don't rub against each other,
place boards on top, and put about
5 sun (15cm) of soil on top. Of course, arrange the boards so they don't rub
against the grapes either.
○Method for Preserving Pears
One: Dig up well-flourishing mondo grass with its roots
and wrap the pears in this grass, then dig in dry

ground, put in the mondo grass, place board
lids so they don't rub against the pears,
and put about 5 sun (15cm) of soil on top. They will keep
indefinitely. However, wrap one pear
in each clump of mondo grass.
○Same Secret Method
One: When picking pears from the tree, those that have been knocked
to the ground are no good. If you place them among fresh red azuki bean grains
so they don't rub against each other, they will keep indefinitely.
About seven or eight out of ten will remain as if
freshly picked.
○Method for Preserving Citron
One: Pick citrons when they first appear, hang them on bamboo, put a lid on the box,
