欠（かく）べからずきめうの術なり
○夏日（かじつ）酢（す）又は梅酢（うめす）漬（つけ）に醭（かび）を出さぬ法
夏日（かじつ）梅酢（うめず）または米（こめ）の酢（す）に笋（たけのこ）めうが生姜（しやうが）なと漬置（つけおく）事／重宝（てうはう）
なれとも四五日のうちにかび出て其／味（あしはひ）も変（へん）ずるもの也是を防（ふせ）ぐ
法は白芥子（しろげし）の細末（さいまつ）を絹（きぬ）にても布（ぬの）にても袋（ふくろ）とし酢（す）の中へ沈（しづ）め
おけは醭（かび）出ること決（けつし）てなし神秘（しんひ）の妙方なり又／夏日（かしつ）醤油（しやうゆ）
のかび出るにも此方（このはう）にてとまること妙也

欠くべからず奇妙の術なり
○夏日酢又は梅酢漬けにかびを出さない方法
夏日梅酢または米の酢にタケノコ・ミョウガ・生姜など漬け置くことは重宝なれども、四五日のうちにかびが出てその味も変ずるものである。これを防ぐ方法は白芥子の細末を絹でも布でも袋とし酢の中へ沈めおけば、かびが出ることは決してない。神秘の妙方なり。また夏日醤油のかびが出るにもこの方法にて止まることは妙である。
○酒の持ちが悪い徳利をよく酒を保たせる方法
酒の持ちが悪く酒を損ずる徳利は、夏の土用中の節に水を入れて十四五日置いて、その水を捨ててのち酒を入れるべし。以後はいくか酒を入れ置いても酒味を損ずることなし。
○胡椒を粉にする方法
胡椒を茶碗に入れ、瓢箪の尻にてするべし。暫時に細末になること妙なり。これの不思議の妙理は測るべからず。
