ひさかたのあめのみあへに事はじまりし
かしはでの道はもよみづがきのひさしき
ときに肉人部（シヽビトベ）等（ラ）が鮮（ナマス）つくりてかしこき
おほみまへにしもたてまつりけむさまは
いかにとしらえねどかの大津（オホツ）の馬飼（ウマカヒ）
がゆゝしきふるごとをらおもへばそのかみ
といへどいとしもおほならぬことにぞあり
けむさて此ひとまきはさるふるめき
たる事をしかける文にはあらねど其
神世よりながさへ来たるかしはでのわざ
をら今のをつゝに甘菜（アマナ）辛菜（カラナ）とりまじへ
はたの広もの鰭（ハタ）の狭（サ）ものもゝどりの
つくゑのへに如横山（ヨコヤマナス）おきたらはして
天真魚咋（アメノマナグヒ）せむさまをしらたまつばき
つばらにすがのねのねもごろにかきしるし
たればこのみちにしもこゝろをよせまれく
現代語訳
久方の天の御饗に事始まりし
柏手の道は、もよ水垣の久しき
時に、肉人部（ししびとべ）等が膾（なます）作りて畏き
大御前にしも奉りけむ様は
いかにと知らえねど、かの大津の馬飼
が由々しき古事を思えばその昔
といえどいとしも多ならぬことにぞあり
けむ。さてこの一巻はさる古めき
たる事を仕掛ける文にはあらねど、その
神世より長く伝え来たる柏手の業
を今の折に、甘菜辛菜取り交ぜ
鰭の広物、鰭の狭物、百鳥の
机の上に横山のように置き散らして
天真魚咋（あめのまなぐい）せむ様を、白玉椿
詳らかに菅の根の懇ろに書き記し
たればこの道にしも心を寄せ給え。
英語訳
In the eternal heavenly feast, things began
With the way of clapping hands, by the ancient water fence
In those long-ago times, when the meat-preparing people (shishibitobe) made sashimi
And offered it before the august presence—
How this was done, we cannot know, but thinking of those
Ancient solemn tales of the horse-keepers of Otsu,
Even in those ancient times
It was not such a grand affair.
Now this scroll is not written to set forth such ancient
Matters, but rather the craft of preparing feasts
That has been passed down from the age of the gods—
Mixing sweet and bitter vegetables in our present time,
Broad-finned fish and narrow-finned fish, fowl of all kinds
Arranged like mountains across the table,
The manner of the heavenly fish-eating—
This I have recorded in detail like white camellias,
Thoroughly and earnestly like sedge roots,
So please turn your heart to this way.
