現代語訳
○山葵味噌の作り方は前編八十二の茶豆腐の箇所に見えている。○前編九十四の油揚げ流しと四十の黄檗豆腐とを一つにした調理法である。転供豆腐とあるべきを誤って天狗豆腐というのであろう。
八十九 アンヘイ豆腐 おぼろ豆腐を小さい茶碗へ入れ、中へ松露を一つ二つ包み入れて蒸す。茶碗蒸しの作り方のようである。○葛あん、おろし山葵を添える。
九十 塩豆腐 九十六の三清豆腐の箇所に見えている。
九十一 東雲田楽 白味噌をごま油で和え、最初から豆腐に塗って焼く。味噌が焦げないうちに裏まで火がよく通る。
△田楽を薄い醤油のつけ焼きにして、白葛だまりの温かいものをかけ、すり柚子をのせるものを衛士田楽と名付ける。
衛士田楽の名前は詳しく分からないが、ある人の説によると「絵事」の誤りであるという。絵事は白を後にするということである。どのような好事の人が
