現代語訳
も細く切れる。
○また豆腐の細切り突き出しの新しい製法がある。これまであった突き出しは前編『百珍』に記すように、ところてんの突き出しと同じであった。今度のこの製法は手前へ引くのである。これは一つの工夫で、豆腐は台板に残って手際よく切れているのである。
豆腐を入れる際に手前の方三分余りの所へ切り方をして入れるべきである。湯につけながらすっと引くべきである。急いで行うのは良くない。図を見て考えるべきである。

○There is also a new method for making finely cut tofu using a push-through device. The push-through devices that existed until now were the same as those for making kanten jelly, as described in the previous volume "Hundred珍." This new method involves pulling toward oneself. This is one innovation, and the tofu remains on the base board while being cut neatly.
When inserting the tofu, it should be cut and inserted at a position about three-tenths toward the front. It should be pulled smoothly while dipping in hot water. Rushing is not good. One should look at the diagram and think about it.
