打（うち）あじよくあつものにして平（ひら）につけ出（いだ）しぬ甚（はなはだ）
軽（かろ）くして美味（びみ）なりそのゝち宿（やど）にかへり酒食（しゆしよく）
のそへにして友人（ゆうじん）などに製（せい）しふるまひぬ
名（な）も南部（なんぶ）八のへにて食（しよく）せしゆへ其（その）まゝ
はちへどうふなるべし
八はゐとうふといふはいかゞなるにや

打って味よく熱い汁物にして平らな器に盛って出した。とても軽くて美味であった。その後宿に帰り、酒食の添え物として友人などに作ってふるまった。名前も南部八戸にて食したゆえ、そのまま「八戸豆腐」なるべし。
「八杯豆腐」というのはいかがなものか。
▲野狐豆腐
都には占いの専門家がいるが、片田舎には易占いということもないので、狐に吉凶を問う。その方法は、狐の住む穴の口へ生の豆腐を供える。食うか食わないかで善悪を判定することである。それゆえに生で食するものを「野狐豆腐」なるべし。
「奴豆腐」というのは、いつの時代からか間違いである。
