此人（このひと）小麦（こむぎ）に砂糖（さとう）をあわせ焼出（やきだ）し程（ほど）よくさま
しもちひけりよつて貴人（きにん）のもてあそびとなり
この者（もの）へも千之利休（せんのりきう）に申つけ千（せん）の一字（いちじ）をゆるし
則（すなはち）菓子（くはし）の名（ま）も千（せん）の幸（こう）べい〳〵と謂（いひ）ならはし
けるいつしか幸（こう）の字（じ）をはぶきて
せんべい〳〵といふなるべし
此（この）ほどは昔（むかし）にかへり香（こう）べいと口取（くちとり）もまた〳〵

通（とう）し隠居（いんきよ）して年寄（としより）かぶになりけるが元来（ぐはんらい）
酒（さけ）をこのまずあまき物（もの）のみ食（しよく）して朝夕（あさゆふ）おり
ける其頃（そのころ）肥前（ひぜん）崎陽（ながさき）より紅毛（おらんだ）やしきを勤（つと）めし
もの此居（このうち）に食客（しよくかく）となりけるが関取（せきとり）の朝夕（あさゆふ）砂（さ）
現代語訳
【右丁】
この人は小麦に砂糖を合わせて焼き上げ、程よく冷ましたものを持参した。そのため貴人の慰み物となった。
この者へも千利休に申しつけて「千」の一字を許し、
すなわち菓子の名も「千の幸兵衛」と言い習わしていた。いつの間にか「幸」の字を省いて
「せんべい」と言うようになったのであろう。
この頃は昔に戻って「香兵衛」と、口取りもまた
出来上がった。

今は昔のことであるが、錦島有平という力士がいた。
相撲の手練れで古今稀に見る強さで大関に進み、
その上横綱免許の大力士である。めでたく勝ち続けて引退し、年寄株を得たが、もともと
酒を好まず甘い物ばかり食べて朝夕を過ごしていた。その頃肥前長崎よりオランダ屋敷に勤めていた
者がこの家に食客となったが、関取が朝夕砂

This person combined wheat flour with sugar, baked it, and let it cool appropriately before serving it. Therefore, it became an amusement for noble people.
For this person too, Sen no Rikyū gave permission to use the character "sen" (thousand),
and thus the confection came to be called "Sen no Kōbei." Eventually, the character "kō" was omitted and
it came to be called "senbei."
These days, returning to the old ways, "Kōbei" and kuchitori have also
appeared again.
