一赤土を水に立て漬置は和らかに
なるなり又糯米のときするに漬
てもよしにはかなる時はあく水
を出し漬へし
干海鼠和らかに知る㕝
一籾ぬかを以てさつと煑内の砂を取
それよりかんぞう肉桂にて煑へし
和らかに成事妙なり

干翠たけ生に知る㕝
一てうじ湯にて土を煉り立植る
心につくをさし置冬生のきの子に
なるなり
てんふらんの㕝
一何𩵋にてもうんとんの粉にて衣を懸
油にて揚るなり但し前に懸【有ヵ】る菊
の葉てんふらん亦午房蓮根長芋
現代語訳
【右丁】
一、赤土を水に立てて漬け置けば柔らかに
なるなり。また糯米の研ぎ汁に漬け
てもよし。急ぎの時は灰汁水
を出して漬けよ
干海鼠を柔らかにする事
一、籾糠を以てさっと煮て内の砂を取り、
それより甘草、肉桂にて煮よ。
柔らかになること妙なり

干筍を生のようにする事
一、澄まし湯にて土を練り立て植える
心に突くを差し置き、冬生の茸に
なるなり
天麩羅の事
一、何魚にても饂飩の粉にて衣を掛け
油にて揚げるなり。但し前にある菊
の葉天麩羅、また牛蒡、蓮根、長芋
