一、鶯巣は薬種店にある。白湯に漬けて引き裂き、刺身の盛り合わせに用いる。
土佐麩の事
一、土佐麩は十分に引き延ばしてとろとろになるまでして、うどん粉を立て合わせ程度入れてよい。麩十に対してうどん粉三合程度入れてよい。よくよく湯を沸騰させて煮る。火が弱いとむらになってしまい悪い。よく煮れば泡が立ち、段々煮詰まれば泡が消える。その時煮えたと知るべきである。それからすぐに煮汁ごと別の鍋に取り分け、酒と醤油で味付けする。右の麩をよく丸めて釜で煮る。
