【Right page】 ○The method for producing first-grade stock is as follows: ・Beef shin (the lower leg facing forward) 4 kin [approx. 2.4 kg] in weight ・Leftover meat from the previous day's cooking, along with the flesh of wild geese, ducks, chickens, domestic ducks, and all manner of fowl and game — used without separating bones or sinew ・Salt-cured pork leg meat, with fat removed ¼ kin [approx. 150 g] ・Butter (a product made from cow's milk) ⅛ kin [approx. 75 g] ・Leek/spring onion 1 stalk ・Cloves 3 pieces (to be inserted into the root of the leek) ・Turnip (daikon) ※1 1 piece ・Carrot ※2 (Westerners call it "carrot") 3 pieces ・Small lumps of white sugar 3 pieces ・Ground pepper approximately half a teaspoon ・Nutmeg 1 nut (to be ground into powder) ・Ground cinnamon 1/32 kin [approx. 19 g] ・Salt ⅛ kin [approx. 75 g] ・Cold water 4 cups in a "quart" measure ("quart" being the name of a vessel holding slightly over 6 gō [approx. 1.08 L]) ・Additional cold water 【Left page】 2 cups in a "pint" measure ("pint" being the name of a vessel holding slightly over 3 gō [approx. 540 mL]) The above ingredients are then prepared in the following manner: ・Cut the pork leg meat into pieces approximately 3 sun [approx. 9 cm] on each side. Then simmer the beef shin along with the flesh of geese, ducks, and other fowl and game, without separating out the bones or sinew. As for the method of simmering: first, drip butter into the pot, add □ cups of water in a pint measure, then combine all of the foregoing ingredients at once and place them in the pot. Stir the contents of the pot well, and taking as one's guide the point at which the bottom of the pot begins to thicken to a syrupy consistency, add 4 cups of water in a quart measure, and simmer over a low flame for 5 hours (note: one Western hour equals half a Japanese hour [ichitoki]; the same conversion applies hereafter).
