**Preface (Editorial Notes)**
○ The original work consists of one bound set (*chitsu*), combining both an English text and a Japanese translation (*wage*), together forming a single volume. This originated as a personal memorandum (*tebikae-chō*) used by a certain Englishman during his residence in Yokohama, which he entrusted to his Japanese hired servants (*yōfu*) as instructions for preparing his meals. The translation covers nearly the entirety of the original; however, since the circumstances of both foreign and domestic parties are more alike than different, there are passages that readers may find cumbersome. Therefore, on this occasion, the text has been reviewed, corrected, and published for wide circulation, so that it may serve as a useful reference for social intercourse.
○ The original memorandum (*yōsho*), written entirely in *katakana* script (*shin-katakana*), has been rewritten here in *hiragana*.
